Best Icing Ever – Seven Minute Icing

When you eat GMO-free and gluten-free it is fairly easy to find a good cake mix when you do not have the time to make a special cake from scratch. However, finding an icing that is not loaded with sugar is more of a challenge. This seven minute icing is quick to make and lets you control how much sweetener to add. Instead of butter and sugar, egg whites becomes the base. It works great on single and multiple layer cakes!

Healthy Seven Minute Icing

1/2 cup organic maple syrup or raw honey*
1 unbeaten egg white (free-range, farm raised)
1/4 tsp. cream of tartar
1/8 tsp. salt
1 tsp. gluten-free vanilla

In a small pan, heat the maple syrup or honey and set aside. (Do not let it boil.) In a mixing bowl add the egg white, cream of tartar, and salt. Use a mixer to beat these ingredients together as you slowly add the warm sweetener. Continue beating on medium/high until you have the right consistency to spread, from 3 to 5 minutes. Add the vanilla at the end. Spread on cooled cake.

* You can also use a natural sugar like organic coconut sugar, monkfruit, or sukanat. Use 1/2 cup sugar with 3 tablespoons water and heat until the sugar is dissolved.
