Lemons can provide many health benefits as can be seen in this blog post. Lemons can also be used to create delicious recipes! Here is a nice grain-free treat. (Adapted from thespunkycoconut.com.)

Blueberry-Lemon Breakfast Bars

3/4 Cup Coconut Flour
1/2 Cup Tapioca Starch
1/2 Cup Rapidura Sugar (or other organic granulated sugar)
1 Tbsp. Baking Powder (I use Hain Featherweight brand)*
1/2 Cup + 1 Tbsp (I use Nutiva Shortening made with coconut oil and palm oil)
2 Tbsp. Lemon Juice
1/4 Tsp. Sea Salt
3/4 Cup Organic Applesauce
1 Cup Organic Blueberries

Preheat oven to 350 and line the bottom of a 8 x 8 square baking pan with parchment paper. In a large mixing bowl, combine the coconut flour, tapioca, sugar, and baking powder. Cut in the shortening and then add the lemon juice and applesauce. Mix until it forms a thick dough. Fold in the blueberries. Place dough into the baking pan and press dough evenly into the pan. Bake for about 45 minutes. Cut into squares when cooled.

* Typical baking powder is made with corn which is most likely genetically modified. Featherweight Baking Powder is made with potato starch. You can also make your own baking powder: use 1/2 teaspoon cream of tartar and 1/4 teaspoon baking soda for 1 teaspoon baking powder.
